I'm new to Starmade and I have some questions that are bothering me.
1. When I press N, it lists nearby entities, but not always. If I try going to a sector that has an "undiscovered station", I can't see it in the N menu. I presume that's because I need to manually find the station? Or do I need to scan the sector? This also happens with some stations that have names, I still can't find them with N.
2. If I find an undiscovered station, does it change it's name to something?
3. How does scanning work? I know the basics, as in how to set up the system, but what do the scanners detect?

The navigation menu works on these filters: Asteroids, Astronauts, stations, ships,docked ships,turrets,shops. maybe one more I am forgetting. If you can't see something on the nav, you are either not close enough for your nav to put in the marker, or you have it OFF in your filters settings, go into the filters menu on your navigation tab and customize it to your liking. I think having your nav's only target ships that aren't docked will help your chances of locking onto ships with turrets, though I think they removed this.
if you discover a station I am pretty sure it's name is visible to everyone. I could be wrong, that might only be for you, I am not really used to that map yet.
Scanning is more for factions if anything. the scanners let you detect hostile ships in the area that are exploiting your factions territory. it only picks up those that are warring with your faction. so if someone is fighting baalites dead smack in the center of your territory, the game will notify you via a faction message, then it's your choice to go investigate it, or let it slide. Think of it as a Submarine hunter. You don't know where the sub is, so you go to where you think it is (I.E where the game tells you the enemy remotely is) and activate your sonar, or in this case, your scanner to sniff them out. then it's pretty much your call to engage or disengage if you find them. the better the scanner, I am pretty sure the better.

Just a tip, if you're not in a heavily shielded or very fast machine, always jump to the sector next to an unknown station. If you jump straight in you might end up jumping right into the range of an enemy station...

hehhehe or you could jump right into point blank range with it, so close you could touch it, I did that, Peel had to bust me out before I become Cheese, Swiss Cheese to be precise.. Non territoried Void space is very, very dangerous.

haha Kelesith I did that with a SoB massive station, I was so close the nose of my ship was hitting it, I had to back out (in the heat forgot about my cloaker -_-) and I did end up as somewhat swiss cheese
On the nav note, you have to be fairly close to see it on Nav, like less than 10km for example. Also theres a bug you have to use the scroll and the nav stuff appears, sometimes when you click N it doesn't initially show until you scroll up or down, just in case that's the issue

Okay, I've tried everything you said, the filter for stations was already turned on but I turned everything else on too, and I jumped to a sector that has an undiscovered station, and it still wasn't on the radar. I know I should be able to see it, because when I jump to a sector with a named station, I can see it on the radar, as well as the stations in the sectors next to the one I'm in.
It only happens with stations with the name "Undiscovered Station", and yes, every station with that name. It's not limited to just stations, as some planets that are also "undiscovered" also can't be seen on the radar.
Also, it's more than 14km, I think it's 16km
Another fairly related question. What are the dimensions of sectors?

Oh i see, that is a bug. Some times a planet/ station simply doesn't generate.

True, there has been a few times where I've gotten nothing on Nav while in the same sec as a Undiscovered Station.
